I love good food. Honestly, there are times where I love junk food too, but the types of food that keep me excited about cooking and eating are whole, nourishing fresh and delicious ingredients.
Although I struggle with the heat of summer, I absolutely love the abundance of fresh foods that are produced throughout the warmer months. Give me all the kale and beets and tomatoes and corn – especially if they have been grown just a few miles away.
Today, for my Greenville friends, I want to introduce you to a small business service that just popped up in our area called Farmbox Carolina. But if you're not local to the Upstate, keep reading for seasonal recipe inspiration.
What Is Farmbox Carolina?
A delivery service that provides fresh, local grown produce right from farms to your doorstep.
You are able to choose the size of your produce box, make substitutions to the box depending on what your produce preference is, and then choose how often you want the box to arrive.
All the produce in your Farmbox is harvested within 48-72 hours of it arriving on your doorstep so it's pretty much as fresh as it can be. And not only is it farm fresh, but sourced from farms who never use pesticides on their plants while growing so they are about as safe and healthy as can be!

What Produce I Get in My Farmbox
I've gotten two Farmboxes so far – I've been very kindly gifted the Full Harvest Fruits and Veggies box which is recommended for a couple or small family who cook a lot at home. My delivery comes once every two weeks and I've not had to buy produce in the weeks between my boxes.
My first box included:
- whole tomatoes
- avocados
- beets
- potatoes
- yellow squash
- zucchini
- celery
- parsley
- lettuce
- farm fresh eggs
- spinach
- oranges
- apples
- red pepper
My second box that just got delivered included:
- 1 bunch broccoli
- 4 russet potatoes
- 1 lb beets
- 1 lb carrots
- 1 pint grape tomatoes

- 3 navel oranges
- 3 red apples
- 2 pears
- 1 bundle of kale

Dinner Recipes I Have on Deck This Week
Honestly, having a delivery of fresh produce every other week means it's so much easier to plan out meals based on what I know is coming or what I already have in the fridge. It also gets me out of my comfort zone a bit to experiment with ingredients like kale and beets – ones that I might not always go for in the grocery store.
Monday Dinner – sausage, kale, and potato skillet (check it out on Instagram stories today!)
Tuesday Dinner – apple chicken burgers with charred broccoli
Wednesday Dinner – chopped salad with roasted sweet potatoes and soft boiled egg
Thursday Dinner – Enchiladas with fresh avocado, red pepper and kale toppings
Friday Dinner – Beet and Peach Salad with Sourdough Flatbreads
And for all of those beautiful, delicious, healthy meals my grocery list outside of my Farmbox delivery was only about 7 items long!
